Recipe Staple: My Mom’s 4-Ingredient Chicken Salad

I’ve been eating this chicken salad since I could eat … Well, not the same batch, obviously. It’s better than those I’ve had at stores and restaurants because it’s not super chunky so it’s easy to eat and it has just the right hint of sweetness for balance. It’s yummy!

I make it for my family practically weekly.


  • Whole chicken breast with bone
  • 1 cup of pineapple
  • 1 cup of raisins
  • 2-3 cups of mayonnaise


Step 1: Boil the chicken breast in water for 30-45 minutes. Make sure it’s cooked all the way through.

Step 2: Remove chicken from water. Remove bones and skin. Shred chicken.

Step 3: Add pineapple, raisins and mayonnaise. Blend.

Step 4: Refrigerate until it’s time to spread on bread for eating.

If you’re not into raisins, you can also try craisins.
