I warn you, this recipe couldn’t be more pedestrian. (Not that my other recipes are that fancy.)
But I promise, it’s yummy.
- 4-5 pieces of chicken thighs
- 1/3 cup low sodium soy sauce
- 1/3 cup ketchup
- 1/3 cup honey
- 1/2 tsp. oregano
- 2 tbsp. minced garlic
- 2 tbsp. chopped parsley
- 1 tbsp. sesame oil
Step 1: Mix soy sauce, honey, garlic, ketchup, oregano and parsley in a bowl.
Step 2: Heat sesame oil in Instant Pot (sauté setting). Brown chicken in batches of 2 or 3 (roughly 3 minutes each side). When finished, return all the pieces of chicken back into the pot, skin side up. Hit cancel.
Step 3: Add liquid mixture to top of chicken. Seal top of Instant Pot. Set it to pressure cook on high for 20 minutes.
When finished, release the pressure, open and serve. We ate ours with rice and salad.
